You don't need a curated soundtrack worthy of a five-star property. Just put something on before your guests arrive, keep it at a volume where everyone can actually talk, and resist the temptation to change the playlist every ten minutes.
The music should contribute to the atmosphere, not compete with the conversation.
This might be the biggest difference. At a great hotel bar, nobody is searching for a bottle opener, cutting lemons while guests wait, or realizing they're out of ice halfway through the night.
